Meatball curry

* Recipe can be halved to suit your need. *

 

Ingredients:

3 tablespoons oil           

1 box (1.36 kg.) frozen meatballs (approximately 140 meatballs)

2 medium-sized onions, roughly chopped

1 inch ginger, finely chopped

3 cloves garlic, roughly chopped

1.5 tablespoons PT Curry Powder 

2 medium-sized tomatoes, roughly chopped

3/4 cup water

Salt to taste

 

Instructions:

Heat 2 tablespoons oil in a large pot over medium heat. When it is hot, add the meatballs and brown slightly. Remove the meatballs from pot and set aside. Continuing with the same heat, add one more tablespoon of oil to the pot, add the onion, garlic and ginger; slightly brown them stirring occasionally - do not burn. Add PT Curry Powder, meatballs and tomatoes. Toss them around for the spice mixture to coat the meatballs. Add water and salt to taste, and cover and simmer for approximately 10 - 12 minutes or until it reaches the desired thickness.
