Baked Curried Meat
Ingredients:
2.5 pounds chicken, lamb, beef or pork, cut into large pieces
3 tablespoons PT Curry Powder, or adjust amount according to taste
1 teaspoon salt, or to taste
1/4 cup orange juice
2 tablespoons cooking oil
Instructions:
Wash meat and drain well. Add the rest of the ingredients to the meat and mix well. Let it marinate for at least an hour. This can also be done overnight in the fridge. Put marinated meat in a 13" x 9" baking dish, cover with foil and cook at 400 degrees Fahrenheit for 35-40 minutes, only 10 minutes for chicken breast. Uncover and cook for another 20 minutes, or until nicely browned.
