Quick and easy curried rice casserole with shrimp and sausage
Ingredients:
2 ½ cups basmati rice, rinsed and drained
1 tablespoon vegetable oil
4 medium-sized fresh sausages, cut into 2-inch pieces
1 pound raw shrimp, cleaned
½ cup frozen peas
1 jar PT Curry Sauce
½ teaspoon salt, or to taste
3 ¼ cups boiling hot water
Instructions:
Preheat oven to 425 F. Spray a 13” x 9” oven-proof casserole dish with cooking spray.
In a frying pan or skillet, brown sausage pieces and put them into the casserole dish. Add the curry sauce, rice, shrimp, peas and salt. Mix them together. When the oven is ready, pour the water over the rice mixture. Tightly cover the dish with aluminum foil and bake for 40 minutes. Fluff the rice with a fork. Enjoy!
