Paneer mattar (cheese & peas)

Ingredients:

1/4 cup vegetable oil for frying

1 teaspoon salt

1 tablespoon oil

1 bottle PT Curry Sauce

2 cups frozen peas

1.5 cups water

1 pound ricotta cheese that is firm and sold in a plastic bag (not the creamy kind)

 

Instructions:

Cut cheese into one inch cubes. The cheese may seem soft at this time, but will firm up while frying. In a frying pan, heat 1/4 cup oil over medium heat. Fry the cheese cubes a few at a time until golden brown on all sides. Remove from pan and drain on paper towel. After all the cheese cubes have been fried, sprinkle a little salt on them and set aside. In a medium-sized saucepan, heat one tablespoon oil. Add the peas and stir them around for 2-3 minutes. Add the whole bottle of PT Curry Sauce, water and 1 teaspoon salt.  Bring it to a boil, lower heat and simmer for two minutes. Add the fried cheese and bring it to a boil, lower heat and simmer for 5-6 minutes.
