Curried quinoa with vegetables

Ingredients:

1.5 tablespoon cooking oil

1/2 cup chopped onion

1 tablespoon finely chopped ginger

1.5 teaspoon (or to taste) Perfect Taste Curry Powder

1 teaspoon (or to taste) salt

1 cup quinoa, rinsed well

1 cup frozen mixed vegetables

2 cups water/chicken stock/vegetable stock

 

Instructions:

In a large saucepan, over medium heat, sauté onion in oil until onion is translucent. Reduce heat, add ginger, curry powder and salt. Stir for 3 or 4 seconds until the spices are mixed well with the onion and ginger. Add quinoa and stir to coat with the spice mixture. Add the vegetables and stir them around. Add the liquid, give it a stir. Cover the pan, raise the heat to high and bring it to a boil before reducing heat to the lowest

temperature. Cover and cook for 20 minutes. When cooked, fluff quinoa with a fork and

leave it covered for 10 to 15 minutes before serving. This makes for a wonderful

healthy side to any main dish!
