Curried ground chicken or beef with chick peas & potatoes

Ingredients:

1/2 up oil

1.5 to 2 pounds ground beef, or any other meat

2 large onions (10 oz.), sliced

1" ginger, chopped                                                

5 garlic cloves, chopped                                       

4 tablespoons PT Curry Powder     

1 tablespoon salt, or to taste

2 tomatoes, roughly chopped

One 19 oz. can chick peas, with liquid

1/2 pound potatoes, cut in large cubes

1.5 cups water

 

Instructions:

In a large pot, heat oil. Add onion and fry until light brown. Add ginger and garlic, continuing to fry for about a minute or so until it gives off a nice aroma (do not burn). Add PT Curry Powder and salt - mix well with onion mixture. Add meat, stir around to break up lumps and mix well with the spice mixture. Continue to cook for about 5 minutes or so. Add chick peas and tomatoes - stir well to combine all the ingredients. Add potatoes and water - continue to stir in order to incorporate everything. Cover and bring to a boil, stirring occasionally. Lower heat, and cook covered until the potatoes are cooked - approx. 12 -15 minutes.
