Curried pork chops 

Ingredients:

3 tablespoons oil                                                 

2 tablespoons PT Curry Powder   

4 whole cloves                                                      

1.5 to 2 pounds pork chops, cut in half                

1.5 cups water

3/4 teaspoon salt, or to taste

1 medium sized onion, sliced 

1 medium sized tomato, roughly chopped

2 or 3 sprigs fresh coriander (optional)

 

Instructions:

Wash and rinse meat thoroughly. Set aside. In a large pot, heat oil over low heat. Add PT Curry Powder and cloves to the oil and stir around for two seconds, continuing on low heat. Add meat, turn heat on high, stirring around long enough to coat the meat with the PT Curry Powder. Add the water and salt; stir to mix everything well, cover pot and bring to a boil, then lower the heat and simmer for approximate 20 minutes or until the meat is tender. Add onion, tomato (and coriander if using), cover and simmer for 3 more minutes.
