Butternut squash & potato
Ingredients:
2 pounds butternut squash, peeled and cut into large cubes
4 tablespoons oil
2 medium-sized potatoes, peeled and cut into small cubes
1 bottle PT Curry Sauce
1 teaspoon salt
1/2 cup water
Instructions:
In a large saucepan, heat oil. Add the squash and potatoes. Stir them around for 4 or 5 minutes. Add the whole bottle of PT Curry Sauce, water and salt. Stir and mix everything, cover pan, bring to boil, then lower the heat and simmer for about 8 minutes, or until the potatoes are cooked. At this point, if the curry has a lot of liquid, remove lid and boil until desired consistency is reached. It should be a little on the dry side.
