Lentil and mixed bean casserole

Ingredients:

1/4 cup oil

1 medium-sized onion, chopped

1 cup chopped green pepper

4 cloves garlic, finely chopped

1/2 teaspoon salt

1/2 teaspoon black pepper

3.5 tablespoons PT Curry Powder, or adjust amount according to taste

A pinch of sugar

19 oz. can each red kidney beans, mixed beans and chick peas, rinsed and drained

19 oz. can lentils, drained

28 oz. can diced tomatoes, drained

2 cups shredded cheddar cheese

 

Instructions:

In a large frying pan, heat oil and sauté onion and green pepper until onion is soft. Add garlic and cook for about one minute (do not burn). Season with salt and pepper. Add PT Curry Powder and cook for ten seconds, mixing well. Add beans and lentils and stir well to coat the mixture. Add sugar and tomatoes, continuing to stir for about two minutes on low heat to incorporate all the flavours. Put mixture in a 9" x 13" casserole dish, top with cheese and bake uncovered at 350 degrees Fahrenheit for 25 minutes.
